Wonderful Khandvi

Looking for a tasty snack recipe for your kiddo? Look no further – here's a wonderful khandvi recipe just for you. Made with besan and curd, this dish is loaded with protein, iron and calcium.

Ingredients: 1 cup besan, 1 cup fresh curds mixed with 1 1/2 cups of water, 2 to 3 drops of lemon juice, 1 tsp ginger paste, 1/4 tsp turmeric powder, a pinch of asafoetida, salt to taste, 3 tsp oil, 1 tsp mustard seeds, 5 to 6 curry leaves, 2 tbsp freshly grated coconut, 2 tbsp finely chopped coriander

Steps:

1. Mix the besan, curds-water mixture, lemon juice, ginger-green chilli paste, turmeric powder, asafoetida and salt. Cook on a slow flame till it becomes thick.

2. Grease a thali on the reverse side. Divide the batter into two equal portions. While the batter is still hot, spread each portion evenly using a spatula, on the reverse side of the thali evenly to make a thin uniform layer.

3. When cool, cut the khandvi lengthwise into equal portions and roll up each gently.

4. For the tempering, heat 3 tsp oil and add the mustard seeds, asafoetida, curry leaves and green chillies and sauté on a medium flame for a few seconds. Pour over the khandvis. Serve garnished with coconut and coriander.
