Bell Pepper Rice (capsicum rice) is a quick, easy, colourful, delicious rice recipe, which can be made in a jiffy. The flavour of capsicum along with the crunchiness of peanuts makes this rice adorable to your child. Capsicum has antioxidant properties and is great for metabolism.

Ingredients to make Bell Pepper Rice:

1 cup thinly sliced capsicum, 1 tsp. mustard seeds, 1 tbsp. roasted peanuts,1 onion chopped, 1 cup rice (cooked), 1 tsp. oil, 1 tsp. ghee, 4-5 curry leaves, 1 tbsp. chopped coriander leaves, ¼ tsp. turmeric powder, ½ tsp. black pepper powder, ½ tsp. roasted cumin powder, salt to taste.

Steps to make Bell Pepper Rice:

1. Heat a pan and pour oil and ghee, add mustard seeds, when it starts to splutter add peanuts and sauté till they turn golden.

2. Add curry leaves and onions and sauté till the onions are transparent; add turmeric, capsicum and sauté for few minutes or until the capsicum are cooked and soft.

3. Add salt, pepper powder, and cumin powder, stir and fry for 1 minute and then add cooked rice to the pan and mix well and cook for 3-4 minutes, remove from the flame and garnish with coriander leaves.
